Located on the heights of Val d'Entremont, the Fournoutz alpine pasture is one of the iconic alpine pastures of Grand Entremont, one of the most renowned regions for Raclette du Valais AOP. Every summer, cows graze on mountain grass rich in wild flowers and aromatic herbs. It is this alpine milk, processed according to tradition, that gives this Raclette du Valais AOP its character: a seasonal production, in limited quantities, impossible to find during the rest of the year. The cheese is made in the heart of the Liddes Dairy, a guarantee of expertise and consistent quality.

Fournoutz Valais AOP Raclette is a fatty, semi-hard cheese made from whole raw cow's milk according to the traditional Valais method. The alpine flora of the Val d'Entremont is directly reflected in the cheese: a frank and balanced taste, creamy and melting, where lactic and fruity notes combine with vegetal aromas typical of high altitudes. The longer the maturation, the stronger the character. This is exactly what you look for in a real alpine raclette: a cheese that melts smoothly and reveals all the richness of its terroir.

The cheeses are collected at the end of summer, once their aging process is complete, and then shipped to you.

Your cheese will be delivered between early October and October 15, 2026, after the cattle descent from the high pastures and once the maturing process is complete.
