Combyre-Meinaz: The only AOP alpine cheese from Sion and Nendaz

On the high pastures above Nendaz, the Combyre-Meina alpine pasture is the only one in the entire appellation area spanning the municipalities of Sion and Nendaz. Every summer, Hérens breed cows graze on mountain grass rich in wildflowers and aromatic herbs. It is this alpine milk, processed on-site during the summer pasture season, that gives this Raclette du Valais AOP its unique character: a seasonal production, in limited quantities, impossible to find during the rest of the year.

Raw milk alpine cheese, its flavour shaped by the mountains

Combyre-Meinaz AOP Raclette du Valais is a semi-hard cheese made from whole raw cow's milk using the traditional Valais method. The alpine flora is directly reflected in the cheese: a frank and balanced taste, creamy and melting, where lactic and fruity notes combine with vegetal aromas typical of high altitudes. The longer the aging, the stronger the character. This is exactly what you look for in a true Alpine raclette: a cheese that melts smoothly and reveals all its terroir.

By ordering today, you're not just reserving a cheese—you're following the entire story of the season, from the inalpe (moving animals up to the mountain pastures) to the désalpe (bringing them back down). The wheels are collected at the end of summer, once their ripening is complete, then shipped to your home.
