1. Light the fire and let it burn until you have a nice, even layer of embers – avoid high flames. Position the half-wheel 8–15 cm from the embers.
2. Allow to melt for 1 to 2 minutes, depending on the intensity. Rotate the clamp from time to time for even melting. The surface should be shiny and creamy, not bubbling.
3. Just before the cheese begins to drip, remove the clamp and scrape firmly with your raclette knife directly onto the plate. Serve immediately.
