The gesture of the true Valais raclette maker

The Misterraclette raclette knife – Val de Bagnes edition is the tool designed for those who make raclette the way it has been made for centuries in Valais: a half-wheel facing the heat, a blade that glides over the melted cheese, a plate held out.

Its dual-function blade reproduces the scraping gesture: the smooth side deposits the melted cheese onto the plate in a fluid and clean action. The serrated side – whose profile reproduces the ridges of Val de Bagnes – precisely cuts the “religieuse” (the crispy cheese crust). The pointed blade also allows you to pierce the bubbles that form on the cheese that is too close to the heat, and to perform the detachment gesture from the bottom of the cheese – the small up-and-down movement that prevents the cheese from hanging and ensures a complete raclette, without waste.

The peaks of the Val de Bagnes etched in steel

The serration of the blade is not decorative. It faithfully reproduces the profile of the peaks of the Val de Bagnes — one of the cradle valleys of Raclette du Valais AOP, where cheese was melted in front of the fire as early as the 16th century. Five peaks are engraved with their names and altitudes:

Mont Fort (3,328 m) · Bec des Rosses (3,223 m) · Grand Combin (4,314 m) · Petit Combin (3,663 m) · Mont Vélan (3,734 m)

Engraving these peaks on a raclette knife is to embed the tool in the history of the region that gave birth to the tradition.
