Here, at about 1,600 metres, the Dubosson family spends the summer with some 75 cows. Joseph-Marie and Sylvie have run the alp since 1987; their daughters Isabelle and Aline joined them in 2018. The cheese has been made on site, in the alp's own cheese dairy, since 1993.

Not to be confused with our Raclette du Valais PDO from Champsot 2: that is a different cheese, made by Benjamin Dubosson and marked Dents du Midi 12.

A raw-milk alpine cheese stamped “Champsot”

The herd's raw milk is made into cheese on the alp during the summer season, following the Raclette du Valais PDO (AOP) specifications. The name “Champsot” is stamped on the rind of every wheel: proof of its origin. This full-fat, semi-hard cheese gives a raclette with a characterful taste and a creamy melt. According to the Dents du Midi region, Champsot raclette received the Gold Star (Étoile d'or) of the Raclette du Valais AOP interprofession every year from 2016 to 2024, and the family was awarded the Mérite agricole valaisan in 2019. A half wheel (about 2.4 kg) serves about 10 people for a raclette over a wood fire or with a raclette melter; for a quarter-wheel machine, cut it in two. Scrape or cut off the rind before melting and serve with jacket potatoes, gherkins and pickled onions.

Characteristics of Raclette du Valais PDO alpine cheese from Champsot

Cheese: Raclette du Valais PDO alpine cheese (Raclette du Valais AOP d'alpage)

Origin: Champsot alp, above Morgins (municipality of Troistorrents), Val d'Illiez, Valais

Altitude: about 1,600 metres

Stamp on the rind: “Champsot”

Milk: raw cow's milk, made into cheese on the alp during the summer season

Texture: semi-hard, full-fat cheese

Rind: natural morge rind, not washed

Packaging: half or whole wheel, wrapped in cellophane

Weight: about 2.4 kg for a half wheel, 4.8 kg for a whole wheel (28 to 31 cm in diameter)

Ripening: 3 to 5 months

Storage: about 3 months in the fridge

Award: Gold Star (Étoile d'or) of the Raclette du Valais AOP interprofession, every year from 2016 to 2024 (according to the Dents du Midi region)

Frequently asked questions

Where is the Champsot alp?

Above Morgins, in the municipality of Troistorrents, in the Val d'Illiez (Valais), at about 1,600 metres, in the Dents du Midi region.

Why is the rind not washed?

Alpine cheeses are sold with their natural morge, the rind that forms during ripening.
